Bay leaves

Bay leaf comes from the evergreen bay laurel plant. It is native to the Mediterranean and cultivated in many countries such as Mexico, North America, France, Italy, Iran and Turkey. Bay leaves are pungent and have a bitter taste if eaten whole. Dried leaves have a herbal fragrance that is stronger fresh, similar to oregano and thyme. It is a great addition to soups and stews. We use whole bay leaves in most recipes, as it is easier to remove. Ground bay leaves are often used in a tea infuser.
