Mexican Corn Salad

Ingredients

2 tins corn

2 tablespoons Olive oil or butter

1 tablespoon Garlic powder 

1 tablespoon Thyme

3 tablespoon Lemon juice

Mixed pepper & salt to season

1 tablespoon finely chopped Jalapeno (optional)

 

Recipe

Put the corn in small pot on low heat. Add olive oil, thyme, garlic powder, salt and pepper. Drizzle some fresh lemon juice on top. Cook it for 5 minutes or until warm. Top with parmesan cheese, jalapeno and some fresh cilantro.

You can add chili pepper on top along with parmesan.
